There's nothing better than a creamy and healthy mushroom soup once the weather starts getting cooler, and trust me, the sudden rain showers in Singapore has dropped the temperature down to 22 degrees. This cream of mushroom soup is insanely delicious, packed with nutrients, inexpensive, and ready in 25 minutes.
Super easy to make, this warm and comforting bowl of soup gets ready in no time - perfect for a Monday night dinner.
STEPS TO MAKE IT:
Add Olive Oil & Butter in a large saucepan over medium heat.
Add Garlic and Onion and cook for 3 minutes until onion is tender
Add mushroom and cook for another 3-4 minutes.
Add salt, pepper, and Italian herbs into the mixture.
Add water and bring it to a boil. Then, let it cool.
Transfer the mixture into the blender and blend for 2-3 minutes to form a puree.
Re-heat the puree, add a pinch of coriander on top and serve with toasted garlic bread.
INGREDIENTS
1/2 Onion
1 cup mushroom
1 clove of Garlic
1 cup of water
Salt, Pepper, and Italian herbs
1/2 tbsp olive oil and butter
Pinch coriander
