Eggless Christmas Plum Cake (No Alcohol)

⁠Inspired by Shivesh Bhatia's eggless Christmas #PlumCake recipe, I decided to make my own version of it, with ingredients lying around in my kitchen, and I'm so glad I did as it was such a show-stopper during my Christmas lunch last week. ⁠

We all know, Plum cake is a classic Christmas dessert, and everyone has their own version of it, but I made it #eggless and without rum simply because I didn't have either at home, and it still tasted SO SO good!


Key considerations for this recipe:


FOR THE SOAK: ⁠

Traditionally, dry fruits are soaked in rum/brandy for months, or even years but this was a last-minute plan, so I used a quick hack to soak the dried-fruits. In a pan, take orange juice, lime juice and water and add dry fruits to it. Put this aside for 30 mins, and it makes the dry fruits extremely flavourful for the cake. I use tutti frutti, raisins, dried cranberries, but you can use whatever dry fruits you have.


FOR THE CAKE:

This cake is eggless, but it's still moist, fluffy and soft. I used yogurt as a substitute to eggs to get that texture. Also, using brown sugar instead of white gives this cake better depth of flavour and beautiful deep colour.


FOR THE TASTE:

A Christmas cake needs to smell like Christmas, so that it gives us that warm, fuzzy and cozy feeling. I used powdered cinnamon, clove and ginger in this recipe.


FOR THE TEXTURE:

This cake has to be cooked slowly at a lower temperature so that it becomes really flavourful and the texture comes out just right. A normal cake is cooked for 30 to 40 minutes while this cake is cooked for 50-55 minutes at 160 degrees temperature.


Recipe for Eggless Christmas Cake (without Alcohol)


  1. In a saucepan, take orange juice, lemon juice and water.

  2. Add dry fruits (tutti frutti, raisins, and dried cranberries) to the juice mix and cook till the mixture thickens and the dry fruits absorb all the juices. Set aside for 20-30 mins

  3. Pre-heat the oven to 160 degree C and line a round cake pan with parchment paper.

  4. In a bowl whisk together flour, baking powder, baking soda, winter spices and orange zest and set aside.

  5. Whisk together sugar and oil in a separate bowl until pale and well combined.

  6. Now add the yogurt to the oil and sugar mixture and mix well.

  7. Add the vanilla extract.

  8. Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage.

  9. Transfer the batter to the prepared cake pan, add 3 oranges on the top or top it with dried fruits.

  10. Bake at 160C for 50-55 minutes or only until a skewer inserted in the center comes out clean.

  11. Let it cool and serve!
